200g udon noodles

3 tablespoons chili oil (adjust for spice preference)

2 cloves garlic, minced

1 inch ginger, finely grated

2 green onions, chopped (reserve some for garnish)

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 tablespoon sesame seeds (optional)

Fresh cilantro for garnish (optional)

Salt, to taste
