200g fresh udon noodles

3 tablespoons chili oil (store-bought or homemade)

2 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon sesame oil

1 tablespoon rice vinegar

1/2 cup scallions, finely chopped

1/4 cup cilantro, chopped (optional)

1 tablespoon toasted sesame seeds

Salt, to taste

Fresh lime wedges, for serving

Instructions
 

Cook the Udon Noodles: Bring a pot of water to boil. Add the fresh udon noodles and cook according to package instructions, typically around 3-4 minutes. Once cooked, drain and rinse under cold water to stop the cooking process, then set aside.

    Prepare the Sauce: In a mixing bowl, combine the chili oil, minced garlic, soy sauce, sesame oil, and rice vinegar. Whisk until well blended.

      Combine Noodles and Sauce: In a large mixing bowl, add the drained udon noodles. Pour the prepared chili oil mixture over the noodles. Toss gently until the noodles are well coated.

        Add Flavorful Toppings: Fold in the chopped scallions and cilantro (if using). Sprinkle with toasted sesame seeds and season with salt to taste.
