Ingredients
  

2 cups all-purpose flour

2 tsp baking powder

1/4 tsp baking soda

1/2 tsp salt

1 tsp cinnamon

1/4 tsp nutmeg

1/2 cup granulated sugar

2 medium apples, peeled, cored, and finely chopped (Granny Smith or Honeycrisp work well)

2 large eggs

1/2 cup buttermilk

1/4 cup unsweetened applesauce

1/4 cup melted butter

1 tsp vanilla extract

Oil for frying

Powdered sugar (for dusting)

Instructions
 

In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and granulated sugar until well combined.

    In another bowl, mix the eggs, buttermilk, applesauce, melted butter, and vanilla extract until smooth.

      Pour the wet ingredients into the dry ingredients and mix gently until just combined. Fold in the chopped apples without over-mixing; the batter should be slightly lumpy.

        Heat oil in a deep skillet or pot over medium heat, about 3 inches deep. The oil should reach 350°F (175°C). Use a thermometer to ensure the right temperature.

          To create uniform bites, use a small cookie scoop or spoon to drop tablespoon-sized amounts of batter into the hot oil. Fry in batches, being careful not to overcrowd the pan, for about 2-3 minutes on each side or until golden brown.

            Remove the fritter bites with a slotted spoon and let them drain on paper towels to remove excess oil.

              While still warm, dust the fritters with powdered sugar for a sweet finish before serving.
