1 cup all-purpose flour

1/3 cup boiling water

1/4 teaspoon salt

1/2 pound ground pork (or chicken)

2 green onions, finely chopped

1 tablespoon soy sauce

1 teaspoon sesame oil

1 teaspoon ginger, grated

1 clove garlic, minced

1/2 teaspoon crushed red pepper flakes (adjust for spice preference)

For the Soup:

4 cups chicken or vegetable broth

1 tablespoon soy sauce

1 teaspoon chili paste (adjust for heat preference)

1 tablespoon fresh lime juice

1 cup baby bok choy, chopped

1 medium carrot, julienned

2-3 mushrooms, sliced

Fresh cilantro, for garnish

Sliced jalapeƱos (optional, for extra heat)

Instructions
 

Make the Dumpling Dough:

    In a mixing bowl, combine the flour and salt. Slowly add the boiling water while stirring with a fork until it forms a shaggy dough. Allow it to cool slightly, then knead it on a floured surface for about 5 minutes until smooth. Cover with a damp cloth and let rest for 30 minutes.

      Prepare the Filling:

        In another bowl, mix the ground pork, green onions, soy sauce, sesame oil, ginger, garlic, and crushed red pepper flakes until well combined.

          Assemble the Dumplings:

            Divide the rested dough into small pieces (about 1 inch each). Roll each piece into a thin circle. Place about a teaspoon of the filling in the center of each circle. Moisten the edges with a bit of water and fold the dumpling in half, pinching the edges to seal. You can also pleat the edges for an authentic look.

              Cook the Dumplings:

                Bring a pot of water to a boil. Gently drop in the dumplings and cook for about 4-5 minutes, or until they float to the surface and are cooked through. Remove them with a slotted spoon and set aside.
