Bang Bang Chicken Bowl

2 boneless, skinless chicken breasts

1 cup cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup buttermilk

Oil for frying (canola or vegetable)

2 cups cooked jasmine rice (or rice of choice)

1 cup shredded cabbage (green or purple)

1/2 cup shredded carrots

¼ cup green onions, chopped

¼ cup cilantro, chopped

½ cup Bang Bang sauce (store-bought or homemade)

Optional for homemade: ½ cup mayonnaise, 2 tablespoons sweet chili sauce, 1 tablespoon sriracha

Instructions
 

Prep the Chicken: Slice the chicken breasts into bite-sized pieces. In a bowl, mix the cornstarch, garlic powder, onion powder, paprika, salt, and pepper.

    Coat the Chicken: Dip the chicken pieces into the buttermilk, allowing excess to drip off. Then, dredge them in the cornstarch mixture until well-coated. Set aside for a few minutes.

      Fry the Chicken: Heat oil in a frying pan over medium-high heat. Once hot, carefully add the chicken pieces in batches (do not overcrowd the pan) and fry until golden brown and cooked through (about 5-7 minutes). Remove and drain on paper towels.

        Prepare the Bowl: In each serving bowl, layer the cooked jasmine rice at the bottom, followed by a handful of shredded cabbage and carrots.
