For the Chicken:

1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup (60g) cornstarch

1 large egg

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

Oil for frying (vegetable or canola)

For the Bang Bang Sauce:

1/2 cup (120ml) mayonnaise

1/4 cup (60ml) sweet chili sauce

1 tbsp sriracha (adjust for spice level)

1 tsp rice vinegar

1 tsp lime juice

For the Bowls:

2 cups cooked jasmine or brown rice

1 cup shredded carrots

1 cup sliced cucumbers

1 cup red cabbage, thinly sliced

1 avocado, sliced

Green onions, chopped for garnish

Sesame seeds for garnish

Prepare the Chicken: In a large bowl, combine the cornstarch, garlic powder, onion powder, salt, and pepper. In another bowl, whisk the egg. Dip each piece of chicken into the egg, then coat it with the cornstarch mixture, ensuring it's fully coated.

    Fry the Chicken: Heat oil in a large skillet or deep frying pan over medium-high heat. Once hot, carefully add the coated chicken pieces in batches, frying until golden brown and cooked through (about 5-7 minutes). Transfer to a paper towel-lined plate to drain excess oil.

      Make the Bang Bang Sauce: In a medium bowl, mix together mayonnaise, sweet chili sauce, sriracha, rice vinegar, and lime juice until smooth and well combined. Adjust the flavor according to your preference.
