Bang Bang Chicken Skewers

Ingredients
  

1 lb (450g) chicken breast, cut into bite-sized pieces

1/2 cup buttermilk

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

1 cup panko bread crumbs

1 tablespoon chopped green onions (for garnish)

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Bang Bang Sauce:

1/2 cup mayonnaise

1/4 cup sweet chili sauce

1 tablespoon sriracha (or more, based on spice preference)

1 teaspoon lime juice

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the buttermilk, garlic powder, paprika, cayenne pepper, salt, and pepper. Add the chicken pieces, tossing well to coat. Cover and refrigerate for at least 1 hour (or overnight for best flavor).

    Prepare the Sauce: In a separate bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice until smooth. Adjust the heat by adding more sriracha if desired. Set aside.

      Preheat the Grill: Preheat your grill or grill pan to medium-high heat.

        Coat the Chicken: Remove the marinated chicken from the refrigerator. In a shallow dish, place the panko bread crumbs. Take each piece of chicken, allowing excess buttermilk to drip, and coat thoroughly in the panko bread crumbs.

          Skewer the Chicken: Thread the breaded chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

            Grill the Skewers: Place the skewers on the preheated grill. Grill each side for about 4-5 minutes, or until the chicken is cooked through and the coating is golden brown.
