2 tablespoons curry paste (red or yellow)

1 tablespoon soy sauce

1 tablespoon lime juice

1 tablespoon olive oil

1 onion, diced

2 cloves garlic, minced

1 inch ginger, minced

1 cup spinach or bok choy

Fresh cilantro for garnish
