Ingredients
  

For the Dumplings:

1 cup all-purpose flour

1/2 tsp salt

1/4 cup boiling water

1/4 cup cold water

1/2 cup finely chopped spinach

1/2 cup grated carrots

1/4 cup chopped green onions

1 tsp curry powder

1/2 tsp garlic powder

Salt and pepper to taste

For the Soup:

1 tablespoon vegetable oil

1 onion, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, finely grated

1 tablespoon curry powder

1/2 teaspoon turmeric

4 cups vegetable broth

1 can (14 oz) coconut milk

1 tablespoon soy sauce

1 tablespoon lime juice

1 cup diced tomatoes

Fresh coriander/cilantro, for garnish

Optional: Sliced red chili for heat

Instructions
 

Prepare the Dumplings:

    In a mixing bowl, combine the flour and salt.

      Gradually add boiling water, mixing with a fork until the mixture resembles coarse crumbs.

        Add cold water, a little at a time, until the dough comes together. Knead it for about 5 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

          In a separate bowl, mix chopped spinach, grated carrots, green onions, curry powder, garlic powder, salt, and pepper.

            Roll out the dough on a floured surface to about 1/8 inch thickness. Cut into 3-inch rounds.

              Place a small spoonful of the filling in the center of each round. Fold in half and pinch to seal.

                Prepare the Soup:

                  In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent.

                    Stir in minced garlic and grated ginger, cooking for another minute until fragrant.

                      Add curry powder and turmeric, stirring well to combine.

                        Pour in the vegetable broth and bring to a simmer.

                          Stir in coconut milk, soy sauce, lime juice, and diced tomatoes. Let the soup simmer for about 10 minutes.

                            Cook the Dumplings:

                              Carefully drop the prepared dumplings into the simmering soup.

                                Cook for about 5-7 minutes or until the dumplings float to the top and are cooked through.

                                  Serve:

                                    Ladle the hot soup into bowls and garnish with fresh coriander and sliced red chili if desired.
