Best-Ever Chicken Carbonara

8 oz fettuccine or spaghetti

2 boneless, skinless chicken breasts, diced

4 oz pancetta or diced bacon

3 large eggs

1 cup grated Pecorino Romano cheese

2 cloves garlic, minced

1/2 cup heavy cream

1/2 tsp black pepper

Salt, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine or spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water and drain the rest. Set the pasta aside.

    Cook the Chicken: In a large skillet over medium heat, add a drizzle of olive oil. Add the diced chicken, season with salt and pepper, and cook for about 6-8 minutes until golden and cooked through. Remove from the skillet and set aside.

      Sauté the Pancetta: In the same skillet, add the pancetta or bacon. Cook until crispy, about 4-5 minutes. Add the minced garlic and sauté for another minute until fragrant.

        Prepare the Sauce: In a mixing bowl, whisk the eggs, heavy cream, grated Pecorino Romano cheese, and black pepper until well combined.

          Combine Ingredients: Reduce the skillet heat to low and add the pasta, chicken, and pancetta mixture. Slowly pour in the egg and cheese mixture, stirring constantly to coat the pasta without scrambling the eggs. If the sauce is too thick, add some reserved pasta water a little at a time until you reach the desired creaminess.

            Serve: Remove from heat and garnish with freshly chopped parsley and additional cheese if desired. Serve immediately and enjoy!
