500g boneless chicken thighs, cut into bite-sized pieces

2 tablespoons black pepper, freshly ground

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

4 tablespoons vegetable oil (divided)

1 onion, thinly sliced

3 cloves garlic, minced

1 inch ginger, minced

1 bell pepper (red or green), sliced

2 green onions, chopped

1 tablespoon sesame oil

Salt, to taste

Fresh cilantro, for garnish (optional)

Instructions
 

Marinate the Chicken: In a bowl, combine the chicken pieces, 1 tablespoon of black pepper, soy sauce, oyster sauce, and cornstarch. Mix well and let marinate for at least 30 minutes.

    Sauté Aromatics: Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Add the sliced onion, minced garlic, and ginger. Stir-fry for about 2-3 minutes until fragrant and the onion begins to soften.

      Cook the Chicken: Add the marinated chicken to the skillet. Cook for about 5-7 minutes, stirring frequently until the chicken is cooked through and slightly browned.

        Add Vegetables: Toss in the sliced bell pepper and remaining black pepper. Stir and cook for another 3-4 minutes until the bell pepper is tender but still crunchy.

          Finish with Green Onions: Drizzle the sesame oil over the chicken mixture and add chopped green onions. Season with salt to taste. Stir well to combine all ingredients.

            Serve: Remove from heat and transfer the black pepper chicken to a serving dish. Garnish with fresh cilantro if desired and serve hot with steamed rice or noodles.
