Bruschetta Chicken Pasta

Made with tender chicken breasts, al dente penne pasta, and vibrant cherry tomatoes, this dish bursts with fresh flavors. Tossed with garlic, fresh basil, and a tangy balsamic glaze, it’s quick and easy to make in just 30 minutes. Top with grated Parmesan for an extra touch of indulgence. Ingredients
  

2 large chicken breasts, diced

8 oz penne pasta

2 cups cherry tomatoes, halved

1 cup fresh basil, chopped

4 cloves garlic, minced

1/4 cup balsamic vinegar

1/3 cup olive oil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Grated Parmesan cheese, for serving

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Season the diced chicken with salt and pepper. Sauté the chicken in the skillet until cooked through and golden, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Make the Bruschetta Topping: In the same skillet, add the remaining olive oil and sauté the minced garlic for about 30 seconds until fragrant. Add the halved cherry tomatoes, balsamic vinegar, red pepper flakes, salt, and pepper. Cook for 3-4 minutes until the tomatoes are softened and juicy.

        Combine Ingredients: Return the cooked chicken to the skillet with the tomato mixture. Add the cooked pasta and fresh basil, stirring to combine. Cook for an additional 2-3 minutes until everything is heated through.

          Serve: Plate the bruschetta chicken pasta and top with freshly grated Parmesan cheese. Drizzle a little extra balsamic vinegar for added flavor, if desired.
