6 large potatoes, peeled and diced

1 lb bacon, diced

1 medium onion, chopped

2 cups cheddar cheese, shredded

1 cup milk

4 large eggs

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper, to taste

Fresh chives, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish or use a non-stick cooking spray.

    In a large skillet over medium heat, cook the diced bacon until crispy. Use a slotted spoon to transfer the bacon to a paper towel-lined plate, leaving about 2 tablespoons of bacon fat in the skillet.

      In the same skillet, add the chopped onion and sauté for about 5 minutes, until softened.

        Add the diced potatoes to the skillet with the onions, sprinkle with garlic powder, paprika, salt, and pepper. Cook for about 10-12 minutes, stirring occasionally, until the potatoes are just tender.

          In a large bowl, whisk together the eggs, milk, and a pinch of salt and pepper.

            Layer half of the potato mixture in the bottom of the greased baking dish. Sprinkle half of the crispy bacon and half of the shredded cheese on top.

              Add the remaining potato mixture, followed by the remaining bacon and cheese. Pour the egg mixture evenly over the top.

                Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

                  Remove the foil and bake for an additional 15-20 minutes, or until the casserole is set and the cheese is bubbly and golden brown.

                    Allow to cool for about 5 minutes before garnishing with fresh chives. Slice into squares and serve hot.
