Cheesy Beef Burritos with Crispy Fries

1 lb ground beef

1 cup of shredded cheddar cheese

1 cup of shredded Mexican cheese blend

1 medium onion, diced

2 cloves of garlic, minced

1 packet taco seasoning

1 cup of cooked black beans (optional)

4 large flour tortillas

1/2 cup sour cream

1/4 cup fresh cilantro, chopped (for garnish)

2 large potatoes, cut into fries

2 tbsp olive oil

Salt and pepper to taste

Optional toppings: diced tomatoes, jalapeños, avocado

Instructions
 

Preheat the Oven for Fries: Preheat your oven to 425°F (220°C) for the fries.

    Prepare the Fries: Toss the cut potatoes with olive oil, salt, and pepper on a baking sheet. Spread them out in a single layer and bake for 30-35 minutes, flipping halfway through, until golden brown and crispy.

      Cook the Beef Mixture: While the fries are baking, in a large skillet over medium heat, add a splash of olive oil and sauté the diced onion and minced garlic until the onion is translucent. Add the ground beef and cook until browned, breaking it apart with a spatula.

        Season the Beef: Drain any excess fat, then add taco seasoning and cooked black beans (if using). Add 1/4 cup water and simmer for about 5 minutes until heated through and combined.

          Assemble the Burritos: Lay out the flour tortillas flat. In the center of each tortilla, add a scoop of the beef mixture, followed by a generous handful of shredded cheddar and Mexican cheese. Fold in the sides and roll them tightly to secure the filling.

            Heat the Burritos: In the same skillet, place the burritos seam-side down and cook on medium heat for about 2-3 minutes on each side until they are golden and the cheese has melted.
