Ingredients

1 pound ground beef

1 medium onion, diced

2 cloves garlic, minced

1 can (10 oz) enchilada sauce

1 cup beef broth

1 package (9 oz) refrigerated cheese tortellini

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Instructions

Cook the Beef: In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and cook until it becomes translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

Add the Ground Beef: Increase the heat to medium-high, add the ground beef, and cook until browned. Break it apart with a spatula, seasoning with chili powder, cumin, salt, and pepper. Drain any excess fat.

Mix in Sauces: Once the beef is cooked, reduce the heat to medium, then stir in the enchilada sauce and beef broth. Allow the mixture to simmer for about 5 minutes, letting the flavors meld.

Cook the Tortellini: In a separate pot, bring water to a boil and cook the cheese tortellini according to the package instructions. Drain and set aside.

Combine Everything: Add the cooked tortellini to the skillet with the beef mixture, stirring to combine thoroughly.

Cheesy Topping: Preheat the oven to 350°F (175°C). Transfer the tortellini and beef mixture into a greased baking dish. Sprinkle evenly with cheddar and Monterey Jack cheese on top.

Bake: Place the dish in the oven and bake for about 20 minutes, or until the cheese is bubbly and golden.

Garnish and Serve: Remove from the oven, let it cool for a few minutes, and garnish with fresh chopped cilantro before serving. Enjoy your cheesy, comforting dish!
