Cheesy Masala Beans on Toast

Ingredients
  

1 can (15 oz) of cannellini or kidney beans, drained and rinsed

1 medium onion, finely chopped

2 cloves of garlic, minced

1 green chili, finely chopped (adjust to taste)

1 teaspoon cumin seeds

1 teaspoon garam masala

1/2 teaspoon turmeric powder

1/2 teaspoon red chili powder (adjust to taste)

1/2 cup shredded cheese (cheddar or mozzarella)

2 tablespoons olive oil

Salt, to taste

4 slices of your favorite bread (whole grain, sourdough, or ciabatta)

Fresh cilantro, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Heat olive oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds until aromatic.

    Add chopped onions and sauté until they are translucent and golden brown, about 5-7 minutes.

      Stir in the minced garlic and chopped green chili, sautéing for another minute until fragrant.

        Add the drained beans to the pan, followed by garam masala, turmeric powder, red chili powder, and salt. Mix well to coat the beans in the spices.

          Gently mash some of the beans with the back of a spoon to create a creamy texture but leave some whole for a nice bite. Cook for another 5 minutes, allowing the flavors to meld.

            Stir in the shredded cheese until melted and well combined, creating a cheesy, thick mixture.

              Meanwhile, toast the slices of bread until golden brown.

                To serve, spoon the cheesy masala bean mixture generously over the toasted bread and garnish with fresh cilantro.

                  Serve with lemon wedges on the side for an extra zing!
