Chicken Alfredo Lasagna Rolls

9-12 lasagna noodles

2 cups cooked chicken, shredded

1 cup ricotta cheese

2 cups mozzarella cheese, shredded (divided)

1 cup freshly grated Parmesan cheese

1 cup Alfredo sauce (store-bought or homemade)

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

2 tablespoons fresh parsley, chopped (for garnish)

1/2 teaspoon Italian seasoning

Salt to taste

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Lasagna Noodles: Cook the lasagna noodles in a large pot of salted boiling water until al dente (usually about 8-10 minutes). Drain and lay flat on a clean kitchen towel to cool and prevent sticking.

      Make the Filling: In a mixing bowl, combine shredded chicken, ricotta cheese, half of the mozzarella cheese, garlic powder, black pepper, Italian seasoning, and salt. Mix until well combined.

        Assemble the Rolls: Spread about 2 tablespoons of the chicken mixture along one end of each noodle. Carefully roll the noodle upwards, starting from the filled end, and place seam-side down in a greased 9x13 inch baking dish.

          Add Sauce: Once all rolls are in the dish, pour the Alfredo sauce evenly over the top. Sprinkle the remaining mozzarella and Parmesan cheese over the sauce.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Afterwards, remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

              Garnish and Serve: Once done, remove from the oven and let it cool for about 5 minutes. Garnish with fresh parsley before serving.
