2 packs of instant ramen noodles (discard the seasoning packets)

1 lb boneless, skinless chicken breast, sliced thinly

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon sesame oil

2 tablespoons vegetable oil

2 cloves garlic, minced

1 inch fresh ginger, minced

1 bell pepper (red or yellow), sliced

1 cup snap peas

1 carrot, julienned

2 green onions, sliced

Optional: sesame seeds for garnish

Instructions
 

Cook the Noodles: In a pot, boil water and cook the ramen noodles according to package instructions (about 3-4 minutes). Drain, rinse in cold water, and set aside.

    Prepare the Sauce: In a small bowl, mix together the soy sauce, oyster sauce, and sesame oil. Set aside.

      Cook the Chicken: In a large frying pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced chicken and stir-fry for about 5-7 minutes or until cooked through. Remove the chicken from the pan and set it aside.

        Stir-Fry the Vegetables: In the same pan, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, stir-frying for about 30 seconds until fragrant. Then, add the bell pepper, snap peas, and carrot. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

          Combine Everything: Add the cooked chicken back to the pan, followed by the cooked ramen noodles. Pour the prepared sauce over the mixture. Toss everything together for about 2-3 minutes, making sure the noodles and chicken are evenly coated with the sauce and heated through.

            Garnish and Serve: Remove from heat and sprinkle with sliced green onions and sesame seeds if desired. Serve hot and enjoy!
