Ingredients
  

1 pound ground chicken

1/2 cup finely chopped red bell pepper

1/4 cup chopped fresh parsley

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon crushed red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 tablespoon olive oil

8 bamboo skewers (soaked in water for 30 minutes)

Optional: your choice of dipping sauce (like garlic aioli or tzatziki)

Instructions
 

In a large mixing bowl, combine the ground chicken, red bell pepper, parsley, garlic, smoked paprika, oregano, and crushed red pepper flakes. Season with salt and pepper.

    Mix thoroughly using your hands or a spatula until all ingredients are evenly distributed.

      Take a handful of the mixture and shape it into a sausage-like log. Slide it onto a bamboo skewer, pressing firmly to ensure it sticks. Repeat with the remaining mixture until all skewers are filled.

        Preheat your grill or grill pan over medium heat and brush lightly with olive oil.

          Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.

            Remove the skewers from the grill and let them rest for a few minutes before serving.

              Serve the skewers hot with your choice of dipping sauce.
