8 oz elbow macaroni

1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) kidney beans, rinsed and drained

1 can (15 oz) diced tomatoes with green chilies (undrained)

1 can (8 oz) tomato sauce

2 cups beef or vegetable broth

2 tsp chili powder

1 tsp cumin

1 tsp paprika

Salt and pepper to taste

1 ½ cups shredded cheddar cheese

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, boil salted water and cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

    Brown the Meat: In the same pot, over medium heat, add the ground beef or turkey. Cook until browned, breaking it apart with a wooden spoon. Drain excess grease if necessary.

      Sauté the Aromatics: Add the diced onion and minced garlic to the pot. Sauté until the onion is soft and translucent, about 3-5 minutes.

        Combine Ingredients: Stir in the kidney beans, diced tomatoes (with juices), tomato sauce, and beef broth. Mix in the chili powder, cumin, paprika, and salt and pepper to taste. Bring the mixture to a simmer.

          Add the Macaroni: Once simmering, stir in the cooked elbow macaroni. Mix thoroughly to blend all elements well.

            Melt the Cheese: Reduce heat to low, then gradually fold in the shredded cheddar cheese until it’s melted and creamy. For a cheesier dish, add more cheese if desired.
