6 cups day-old bread (such as brioche or challah), cubed

4 large eggs

1 cup whole milk

1/2 cup heavy cream

1/2 cup granulated sugar

1 tablespoon vanilla extract

1 tablespoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/3 cup unsalted butter, melted

1/2 cup brown sugar (for topping)

2 tablespoons granulated sugar (for topping)

1 teaspoon ground cinnamon (for topping)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line it with muffin liners.

    In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, nutmeg, and salt until well combined.

      Add the bread cubes to the mixture, gently folding to ensure all pieces are coated in the egg mixture. Allow the bread to soak for about 10-15 minutes.

        In a separate bowl, prepare the cinnamon sugar topping by combining the brown sugar, granulated sugar, and ground cinnamon. Set aside.

          Once the bread has soaked, add the melted butter to the mixture and fold again until fully incorporated.

            Using a large spoon or cookie scoop, fill each muffin cup about three-quarters full with the bread mixture.

              Sprinkle a generous amount of the cinnamon sugar topping over each muffin.

                Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.

                  Allow the muffins to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.
