4 boneless, skinless chicken thighs

1/2 cup unsalted butter, softened

4 garlic cloves, minced

1 tablespoon smoked paprika

1 tablespoon Worcestershire sauce

1 tablespoon apple cider vinegar

1 tablespoon Dijon mustard

1/2 teaspoon cayenne pepper (adjust to taste)

2 tablespoons fresh parsley, chopped

Salt and black pepper to taste

1 tablespoon olive oil

Lemon wedges, for serving

Prepare the Cowboy Butter: In a medium bowl, combine the softened butter, minced garlic, smoked paprika, Worcestershire sauce, apple cider vinegar, Dijon mustard, cayenne pepper, chopped parsley, salt, and pepper. Mix until well combined. Set aside.

    Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour half of the cowboy butter mixture over the chicken, reserving the other half for later. Ensure the chicken is well-coated, then seal the bag or cover the dish. Marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

      Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Once hot, add the marinated chicken thighs and cook for about 5-7 minutes on each side, or until they reach an internal temperature of 165°F (75°C) and are golden brown.

        Add the Remaining Cowboy Butter: Towards the end of the cooking process, add the reserved cowboy butter mixture to the skillet. Allow it to melt and coat the chicken, cooking for an additional 2-3 minutes. This will enhance the flavor and create a delicious sauce.
