Creamy Chicken Sausage Orzo Skillet

1 lb chicken sausage (sliced)

1 cup orzo pasta

1 medium onion (diced)

3 cloves garlic (minced)

2 cups chicken broth

1 cup heavy cream

1 cup baby spinach

1 cup cherry tomatoes (halved)

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons olive oil

¼ cup grated Parmesan cheese (for garnish)

Fresh basil leaves (for garnish)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the sliced chicken sausage and cook until browned, about 5-7 minutes. Remove and set aside.

    In the same skillet, add the diced onion and cook until translucent, about 4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Stir in the orzo pasta and broth, bringing the mixture to a light boil. Reduce the heat to low, cover, and simmer for about 10 minutes, stirring occasionally, until the orzo is al dente and most of the liquid is absorbed.

        Once the orzo is cooked, add in the heavy cream, Italian seasoning, salt, and pepper. Stir well to combine.

          Add the cooked chicken sausage back into the skillet along with the spinach and cherry tomatoes. Stir until the spinach wilts and everything is heated through, about 2-3 minutes.

            Taste and adjust seasoning as needed. Sprinkle with grated Parmesan cheese and fresh basil leaves before serving.
