2 boneless, skinless chicken breasts

8 oz rotini pasta

4 tbsp unsalted butter

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

2 tbsp fresh parsley, chopped (for garnish)

Optional: ½ cup sun-dried tomatoes, chopped

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente. Drain and set aside.

    Prepare the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning.

      Sauté the Chicken: In a large skillet over medium-high heat, melt 2 tablespoons of butter. Add the chicken breasts and cook for about 5-7 minutes per side, or until fully cooked (internal temperature should reach 165°F). Remove the chicken from the skillet and let it rest, then slice into strips.

        Make the Sauce: In the same skillet, reduce heat to medium and add the remaining 2 tablespoons of butter. Once melted, add the minced garlic and sauté until fragrant (about 30 seconds).

          Creamy Mixture: Pour in the heavy cream and stir to combine. Gradually add the grated Parmesan cheese, stirring continuously until the cheese has melted and the sauce has thickened. If using sun-dried tomatoes, add them now.

            Combine: Add the cooked rotini to the skillet, stirring well to coat the pasta in the creamy sauce. If the sauce is too thick, add a splash of pasta water to reach your desired consistency.
