1 medium onion, diced

3 cloves garlic, minced

2 carrots, diced

1 celery stalk, diced

4 cups vegetable or chicken broth

1 can (14.5 oz) diced tomatoes, undrained

1 cup heavy cream

1 package (9 oz) fresh cheese ravioli

2 cups baby spinach, chopped

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery. Sauté for about 4-5 minutes, until the vegetables are softened. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
