Ingredients

1 lb flank steak (or sirloin), thinly sliced

1 cup jasmine rice (or quinoa)

1 cup beef broth (or water)

1 cup mixed bell peppers, sliced (red, yellow, green)

1 cup fresh spinach or arugula

1 avocado, sliced

1 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 tablespoon olive oil

Sesame seeds for garnish

Fresh cilantro or parsley for garnish

Lime wedges for serving

Instructions

Marinate the Steak: In a bowl, combine the thinly sliced steak with soy sauce, sesame oil, garlic powder, onion powder, salt, and pepper. Let it marinate for at least 20 minutes in the refrigerator to absorb the flavors.

Cook the Rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan, bring 1 cup of beef broth (or water) to a boil. Add the rice, cover, and reduce to a simmer. Cook for about 15 minutes or until the liquid is absorbed. Fluff with a fork and set aside.

Sauté Vegetables: In a large skillet, heat olive oil over medium-high heat. Add the sliced bell peppers and red onion, cooking until they are tender (about 5-7 minutes). Add the fresh spinach or arugula and stir until wilted. Season with salt and pepper. Remove from the skillet and set aside.

Cook the Steak: In the same skillet, add the marinated steak in a single layer. Cook for about 3-4 minutes on each side or until cooked to your desired doneness. For a perfect medium-rare, aim for internal temperature of 135°F (57°C). Remove from heat.

Assemble the Bowl: Start by adding a base of fluffy jasmine rice to each bowl. Layer on the sautéed vegetables, cooked steak, avocado slices, and cherry tomatoes.

Garnish and Serve: Sprinkle sesame seeds and fresh cilantro or parsley on top. Serve with lime wedges on the side for an extra zing. Enjoy!
