Crispy Bang Bang Chicken

1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 large egg, beaten

1 cup panko breadcrumbs

1/2 cup mayonnaise

1 tablespoon sweet chili sauce

1 tablespoon Sriracha (adjust for spice level)

1 teaspoon honey

1 teaspoon lime juice

Fresh cilantro, chopped, for garnish

Cooking oil, for frying

Marinate Chicken: Place the chicken pieces in a bowl. In a separate bowl, combine mayonnaise, sweet chili sauce, Sriracha, honey, and lime juice. Mix well and reserve half of the sauce for drizzling later. Pour the remaining sauce over the chicken, mix to coat, and let it marinate for at least 30 minutes.

    Prepare Breading Stations: In a shallow dish, combine flour, garlic powder, onion powder, paprika, salt, and black pepper. In another bowl, add the beaten egg. In a third dish, place the panko breadcrumbs.

      Coat the Chicken: Take each piece of marinated chicken, dredge it in the seasoned flour, then dip into the egg, and finally roll it in the panko breadcrumbs until well coated. Place coated chicken on a plate.

        Fry the Chicken: In a large skillet or deep fryer, heat the cooking oil over medium-high heat.
