500g beef sirloin, thinly sliced against the grain

1 cup cornstarch

1/2 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

2 large eggs, beaten

Vegetable oil, for frying

1 red bell pepper, thinly sliced

1 green bell pepper, thinly sliced

3 cloves garlic, minced

1-inch piece of ginger, grated

2-3 tablespoons sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

2 spring onions, chopped (for garnish)

Crushed red pepper flakes (optional, for spice)

Prepare the Beef: In a large bowl, mix cornstarch, flour, baking powder, salt, and pepper. Toss the sliced beef in the mixture until evenly coated. Shake off excess.

    Coat and Fry: Dip the coated beef slices into the beaten eggs, ensuring each piece is well coated. Heat enough vegetable oil in a wok or deep pan over medium-high heat for frying (about 1 inch deep). Fry the beef in batches until golden brown and crispy, about 3-4 minutes per batch. Remove and drain on paper towels.

      Stir-fry Veggies: In the same pan, remove excess oil, leaving about 1 tablespoon. Add the minced garlic and grated ginger, stir-frying for 30 seconds until fragrant. Then add the sliced bell peppers and stir-fry for 2-3 minutes until they start to soften.
