Ingredients

1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1/2 cup cold water

Oil, for frying (vegetable or peanut oil)

3 tablespoons honey

3 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 teaspoon red pepper flakes (optional)

Chopped green onions, for garnish

Sesame seeds, for garnish

Instructions

Prepare the Chicken: In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and garlic powder. Dredge the chicken pieces in the flour mixture until fully coated.

Make the Batter: In a separate bowl, mix the cold water with some of the flour mixture to create a thick batter. Dip each floured chicken piece into the batter, allowing the excess to drip off.

Heat the Oil: In a large skillet or wok, heat about 1 inch of oil over medium-high heat. Once hot (you can test by dropping a small amount of batter into the oil; if it sizzles, it’s ready), carefully add the battered chicken pieces in batches, making sure not to overcrowd the pan.

Fry the Chicken: Fry the chicken until golden brown and crispy, about 4-5 minutes per side. Remove and drain on paper towels.

Make the Sauce: In a small saucepan over medium heat, combine honey, minced garlic, soy sauce, rice vinegar, sesame oil, and red pepper flakes (if using). Stir continuously until the sauce thickens slightly, about 3-5 minutes.

Coat the Chicken: Once the chicken is fried, add it back into the pan with the sauce, tossing it until fully coated and sticky.

Garnish and Serve: Transfer the honey garlic chicken to a serving platter, garnish with chopped green onions and sesame seeds. Serve hot over steamed rice or with your favorite side.
