Ingredients

4 boneless, skinless chicken breasts

1 cup breadcrumbs (Panko for extra crispiness)

1 cup all-purpose flour

2 large eggs

1/2 cup crumbled feta cheese

1/4 cup hot honey (store-bought or homemade)

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

Fresh parsley for garnish

Olive oil for frying

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Prepare the Chicken: While the oven is heating, place the chicken breasts between two pieces of plastic wrap or parchment paper. Pound them to an even thickness for even cooking. Season both sides with salt, black pepper, smoked paprika, garlic powder, and onion powder.

Set Up the Breading Station: In three separate shallow bowls, place the flour in the first bowl, the beaten eggs in the second bowl, and the breadcrumbs mixed with crumbled feta in the third bowl.

Bread the Chicken: Dredge each chicken breast in the flour, shaking off excess. Next, dip it in the beaten eggs, allowing any excess to drip off. Finally, coat the chicken in the breadcrumb and feta mixture, pressing it gently to ensure it sticks well.

Fry the Chicken: In a large skillet, heat enough olive oil over medium-high heat to cover the bottom of the pan. Once hot, add the breaded chicken breasts. Cook for about 4-5 minutes on each side or until golden brown and crispy.

Bake in the Oven: Transfer the skillet or place the fried chicken breasts on the prepared baking sheet. Bake in the preheated oven for 10-15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and is cooked through.

Drizzle with Hot Honey: Once the chicken is cooked, drizzle the hot honey generously over each piece while they are still warm.

Garnish and Serve: Garnish with freshly chopped parsley and serve immediately, either with a side salad, roasted vegetables, or your favorite grain.
