Made with tender rotini or penne, juicy cherry tomatoes, creamy mozzarella, and fresh basil, it's tossed in a simple balsamic dressing. Perfect as a side or a light main dish, this salad is both easy to make and packed with flavor. Enjoy it chilled or at room temperature, and don’t forget the optional Parmesan for an extra touch!

Ingredients
  

8 ounces of rotini or penne pasta

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls, halved or diced

1/2 cup fresh basil, chopped

1/4 cup red onion, finely chopped

3 tablespoons balsamic vinegar

3 tablespoons olive oil

1 teaspoon garlic powder

Salt and pepper to taste

Optional: 1/4 cup grated Parmesan cheese for topping

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package directions until al dente. Drain and rinse under cold water to cool.

    Prepare the Dressing: In a small bowl, whisk together the balsamic vinegar, olive oil, garlic powder, salt, and pepper until well combined.

      Combine Ingredients: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, mozzarella, basil, and red onion.

        Add Dressing: Pour the dressing over the pasta mixture, and gently toss until everything is well coated.

          Serve: If desired, sprinkle with grated Parmesan cheese just before serving. Enjoy chilled or at room temperature.
