4 boneless, skinless chicken thighs

1 cup uncooked basmati rice

2 cups chicken broth

1 cup Greek yogurt

1 small cucumber, finely diced

2 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon dried dill

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Baking Dish: In a 9x13 inch baking dish, add the uncooked basmati rice and pour in the chicken broth. Stir to combine.

      Season the Chicken: In a bowl, mix the olive oil, salt, pepper, and paprika. Coat the chicken thighs evenly with the mixture, then place them on top of the rice in the baking dish.

        Make the Tzatziki Sauce: In another bowl, combine the Greek yogurt, diced cucumber, minced garlic, lemon juice, dill, and a pinch of salt. Mix well until smooth.

          Assemble: Spread a generous layer of tzatziki sauce over the chicken thighs in the baking dish.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 10-15 minutes or until the chicken is cooked through and the rice is tender.

              Serve: Remove the dish from the oven and allow it to rest for a few minutes. Garnish with fresh parsley before serving.
