Ingredients
  

2 large cucumbers, thinly sliced

1/4 red onion, thinly sliced

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon grated fresh ginger

1 clove garlic, minced

1 teaspoon sesame seeds

Fresh cilantro or mint leaves for garnish

A pinch of red pepper flakes (optional)

Instructions
 

In a large mixing bowl, combine the sliced cucumbers and red onion.

    In a separate bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey (or maple syrup), grated ginger, minced garlic, and red pepper flakes (if using) until well combined.

      Pour the dressing over the cucumber and onion mixture, tossing gently to coat all the vegetables evenly.

        Let the salad marinate for at least 15 minutes at room temperature or in the refrigerator for up to 2 hours to enhance the flavors.

          Just before serving, sprinkle sesame seeds and garnish with fresh cilantro or mint leaves.
