2 large cucumbers, thinly sliced

1/4 red onion, thinly sliced

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon sugar (or honey for a natural option)

1 teaspoon grated fresh ginger

1 clove garlic, minced

1 tablespoon sesame seeds

2 green onions, chopped

Fresh cilantro for garnish (optional)

Salt and pepper to taste

Instructions
 

In a large bowl, combine the sliced cucumbers and red onion.

    In a separate small bowl, whisk together the rice vinegar, soy sauce, sesame oil, sugar, grated ginger, and minced garlic until well combined.

      Pour the dressing over the cucumbers and onions, tossing gently to coat all the vegetables evenly.

        Season with salt and pepper to taste, ensuring to start with a little salt as the soy sauce is already salty.

          Let the salad sit for about 15-20 minutes at room temperature to allow the flavors to meld. You can also refrigerate it for a chillier option.
