2 boneless, skinless chicken breasts

1 tablespoon olive oil

1 packet chipotle ranch seasoning mix

1 cup cooked brown rice

1 cup black beans, rinsed and drained

1 cup corn kernels (fresh or frozen)

1 cup shredded cheddar cheese

1 cup diced tomatoes

1 avocado, sliced

1/2 cup fresh cilantro, chopped

4 large flour tortillas

1 lime, cut into wedges

Marinate the Chicken: In a bowl, combine the olive oil and chipotle ranch seasoning. Add the chicken breasts, ensuring they're well coated. Marinate for at least 30 minutes (you can marinate for up to 2 hours for a stronger flavor).

    Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Remove the chicken from the marinade and grill for 5-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let it rest for 5 minutes before slicing it into strips.
