Ingredients

1 lb chicken breast, boneless and skinless

1/4 cup chipotle ranch dressing (store-bought or homemade)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

4 large flour tortillas

1 cup cooked rice (white or brown)

1 cup black beans, rinsed and drained

1 cup corn (frozen or canned)

1 cup shredded cheese (cheddar or Mexican blend)

1 avocado, sliced

1 cup fresh lettuce, chopped

Fresh cilantro for garnish

Lime wedges for serving

Instructions

Marinate the Chicken: In a large bowl, combine chicken breast, chipotle ranch dressing, olive oil, garlic powder, cumin, smoked paprika, salt, and pepper. Ensure the chicken is evenly coated. Cover and let marinate in the refrigerator for at least 30 minutes (or up to overnight for more flavor).

Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Once hot, add the marinated chicken and grill for 6-7 minutes on each side, or until fully cooked and no longer pink in the center (internal temperature of 165°F). Remove from the grill and let it rest for a few minutes before slicing into strips.

Warm the Tortillas: While the chicken is resting, warm the tortillas on the grill or in a dry skillet for about 30 seconds on each side until soft and pliable.

Assemble the Burritos: Start by placing a generous scoop of cooked rice in the center of each tortilla. Add a layer of black beans, corn, grilled chicken strips, shredded cheese, sliced avocado, and chopped lettuce.

Wrap It Up: To fold the burrito, start by folding in the sides of the tortilla over the filling, then roll from the bottom up, tucking the ingredients in as you go, until sealed.

Final Grilling (Optional): If desired, place the assembled burritos back on the grill for an additional 2-3 minutes on each side to create a crispy outer layer and melt the cheese.

Serve: Slice the burritos in half diagonally and garnish with fresh cilantro. Serve with lime wedges on the side and additional chipotle ranch dressing for dipping.
