8 oz linguine pasta

1 lb boneless, skinless chicken breasts, diced

4 tablespoons unsalted butter

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup fresh spinach

¼ cup fresh parsley, chopped (for garnish)

½ cup grated Parmesan cheese (optional for serving)

Instructions
 

Cook the Linguine: In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the diced chicken, season with salt and pepper, and cook for about 7-8 minutes, or until cooked through and golden brown. Remove the chicken from the skillet and set aside.
