Easy Grilled Thai Chicken Skewers (With Peanut Sauce!)

Ingredients
  

1 pound boneless, skinless chicken thighs (cut into 1-inch pieces)

2 tablespoons fish sauce

2 tablespoons soy sauce

1 tablespoon brown sugar

1 tablespoon lime juice

3 cloves garlic (minced)

1 teaspoon ground coriander

1/2 teaspoon turmeric

1/4 teaspoon chili flakes (adjust for spice preference)

1 tablespoon vegetable oil (for grilling)

Fresh cilantro and lime wedges (for garnish)

For the Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup coconut milk

2 tablespoons soy sauce

1 tablespoon lime juice

1 tablespoon brown sugar

1 teaspoon sriracha (adjust for spice preference)

1 clove garlic (minced)

Water (to thin, as needed)

Instructions
 

Marinate the Chicken: In a large bowl, combine fish sauce, soy sauce, brown sugar, lime juice, minced garlic, ground coriander, turmeric, and chili flakes. Add the chicken pieces and mix until well coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.

    Prepare the Skewers: If using wooden skewers, soak them in water for 30 minutes to prevent burning on the grill. After marinating, thread the chicken pieces onto the skewers, leaving a little space between each piece.

      Make the Peanut Sauce: In a medium bowl, whisk together the peanut butter, coconut milk, soy sauce, lime juice, brown sugar, sriracha, and minced garlic until smooth. If the sauce is too thick, slowly add water until the desired consistency is reached. Set aside.

        Preheat the Grill: Preheat your grill to medium-high heat and lightly oil the grates to prevent sticking.

          Grill the Skewers: Place the chicken skewers on the grill. Grill for about 5-6 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks.

            Serve: Remove the skewers from the grill. Serve hot, drizzled with the peanut sauce and garnished with fresh cilantro and lime wedges on the side.
