Easy One Pot Creamy Tomato Pasta

12 ounces pasta (penne or fusilli recommended)

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 can (14 ounces) diced tomatoes

1 can (15 ounces) tomato sauce

2 cups vegetable broth (or chicken broth)

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

1 cup heavy cream (or a non-dairy alternative)

1/2 cup grated Parmesan cheese (plus extra for serving)

Fresh basil leaves, for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat.

    Add the chopped onion and sauté for about 3-4 minutes until translucent.

      Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Pour in the diced tomatoes, tomato sauce, and vegetable broth. Mix well.

          Add the pasta, oregano, basil, red pepper flakes, salt, and pepper. Stir to combine.

            Bring the mixture to a boil, then reduce the heat and cook, stirring occasionally, for about 10-12 minutes or until the pasta is al dente and most of the liquid has been absorbed.

              Lower the heat and stir in the heavy cream and Parmesan cheese until everything is creamy and well combined. Adjust seasoning if necessary.

                Serve hot, garnished with fresh basil leaves and extra Parmesan cheese.
