20 jumbo pasta shells

2 cups fresh spinach, chopped

15 oz ricotta cheese

1 cup mozzarella cheese, shredded (plus extra for topping)

1/2 cup Parmesan cheese, grated

1 large egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

2 cups marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Pasta: In a large pot of salted boiling water, cook the jumbo shells according to package instructions until al dente. Drain and set aside to cool slightly.

      Prepare Filling: In a medium bowl, combine the ricotta cheese, chopped spinach, 1 cup of mozzarella cheese, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and black pepper. Mix until well combined.

        Stuff Shells: Carefully fill each pasta shell with the spinach and ricotta filling, using a spoon or a piping bag for easier filling.

          Layer Sauce: Spread 1 cup of marinara sauce on the bottom of a 9x13 inch baking dish. Arrange the stuffed shells in a single layer on top of the sauce.

            Add Sauce and Cheese: Pour the remaining marinara sauce over the stuffed shells, covering them evenly. Sprinkle the remaining mozzarella cheese on top.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and slightly golden.

                Garnish and Serve: Remove from the oven, let cool for a few minutes, and garnish with fresh basil if desired. Serve warm!
