Easy Spinach and Ricotta Stuffed Shells – A Healthy Veggie Dinner

20 jumbo pasta shells

1 cup ricotta cheese

1 cup fresh spinach, chopped (or 1/2 cup frozen, thawed, and drained)

1 cup shredded mozzarella cheese, divided

1/4 cup grated Parmesan cheese

1 egg, lightly beaten

2 cups marinara sauce

1 teaspoon garlic powder

1/2 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Shells: In a large pot of salted boiling water, cook the jumbo pasta shells according to package instructions until al dente. Drain and set aside to cool slightly.

      Prepare the Filling: In a mixing bowl, combine the ricotta cheese, chopped spinach, half of the mozzarella cheese (1/2 cup), Parmesan cheese, beaten egg, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.

        Stuff the Shells: Take a spoonful of the ricotta-spinach mixture and gently stuff each jumbo shell. Place the stuffed shells in a greased 9x13 inch baking dish.

          Add Marinara Sauce: Spread 1 cup of marinara sauce evenly over the stuffed shells. Sprinkle the remaining mozzarella cheese on top.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

              Serve: Let the shells cool for a few minutes before serving. Garnish with fresh basil leaves, if desired. Enjoy your healthy veggie dinner!
