Easy Spinach & Ricotta Stuffed Shells

12 large pasta shells

1 cup ricotta cheese

2 cups fresh spinach, chopped

1 cup shredded mozzarella cheese, divided

1/2 cup grated Parmesan cheese

1 egg, lightly beaten

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

2 cups marinara sauce

Fresh basil, for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    Cook the pasta shells in a large pot of boiling salted water for 10-12 minutes, or until al dente. Drain and set aside to cool slightly.

      In a large mixing bowl, combine ricotta cheese, chopped spinach, 1/2 cup mozzarella cheese, Parmesan cheese, beaten egg, garlic powder, Italian seasoning, salt, and pepper. Mix well until all ingredients are fully combined.

        Spoon about 2 tablespoons of the spinach and ricotta mixture into each cooked pasta shell.

          Spread half of the marinara sauce evenly on the bottom of a baking dish. Place the stuffed shells in the dish, open side up.

            Pour the remaining marinara sauce over the stuffed shells, ensuring they are well coated.

              Sprinkle the remaining mozzarella cheese on top.

                Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.

                  Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

                    Remove from the oven and let it sit for 5 minutes before serving. Garnish with fresh basil if desired.
