Ingredients

2 boneless, skinless chicken thighs

2 tablespoons chili paste (adjust to taste)

1 tablespoon soy sauce

1 tablespoon sesame oil

2 garlic cloves, minced

4 cups chicken broth

2 packs of ramen noodles (discard the seasoning packets)

1 tablespoon miso paste

1/2 cup heavy cream

2 green onions, sliced

1 cup baby spinach

1 tablespoon rice vinegar

Salt and pepper to taste

Toppings: soft-boiled eggs, sesame seeds, and additional green onions

Instructions

Marinate Chicken: In a bowl, mix the chili paste, soy sauce, sesame oil, and minced garlic. Add the chicken thighs and coat them well. Let marinate for at least 30 minutes.

Cook Chicken: In a skillet over medium heat, heat a bit of oil. Add the marinated chicken thighs and cook for about 6-7 minutes on each side until fully cooked. Remove from the skillet and let rest before slicing.

Prepare Ramen Broth: In a large pot, heat the chicken broth over medium heat. Stir in miso paste until fully dissolved, and bring to a gentle simmer.

Cook Noodles: Once the broth is simmering, add the ramen noodles and cook according to package instructions, usually around 3-4 minutes. In the last minute of cooking, add the baby spinach and allow it to wilt.

Make Creamy Garlic Sauce: In a small saucepan, combine heavy cream and rice vinegar. Cook over low heat, stirring occasionally, until warmed through. Season with salt and pepper. Remove from heat.

Assemble the Dish: Divide the noodles and spinach among bowls, ladle the hot broth over them. Top with sliced chicken, a drizzle of creamy garlic sauce, and your choice of toppings (soft-boiled egg, sesame seeds, and green onions).

Serve Hot: Enjoy your Fiery Chicken Ramen with Creamy Garlic Sauce while hot!
