Garlic Butter Steak and Potatoes Skillet

1 lb (450g) sirloin steak, cut into bite-sized pieces

1 lb (450g) baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1 tablespoon fresh thyme, chopped (or 1 teaspoon dried)

Salt and pepper, to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Potatoes: In a medium pot, bring salted water to a boil. Add the halved baby potatoes and cook for about 10-12 minutes, until tender but not mushy. Drain and set aside.

    Cook the Steak: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the steak pieces with salt and pepper. Once the oil is hot, sear the steak in the skillet for about 3-4 minutes on each side, or until browned and cooked to your liking. Remove the steak from the skillet and set it aside.

      Sauté the Potatoes: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add the cooked baby potatoes cut side down. Sauté for about 5-7 minutes until they are golden and crispy.

        Add Garlic and Herbs: Add minced garlic, rosemary, and thyme to the skillet with the potatoes. Cook for an additional 2-3 minutes until the garlic is fragrant but not burnt.

          Combine: Return the cooked steak to the skillet, tossing it with the potatoes and garlic-herb mixture. Stir well for 2-3 minutes to heat everything through and combine the flavors.
