Garlic Butter Steak Bites and Potatoes

1 lb sirloin steak, cut into bite-sized cubes

1 lb baby potatoes, halved

4 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or ½ teaspoon dried)

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried)

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes:

    Preheat your oven to 400°F (200°C). In a large mixing bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet in a single layer.

      Roast the Potatoes:

        Place the baking sheet in the preheated oven and roast the potatoes for about 20–25 minutes or until golden brown and crispy, flipping them halfway through for even cooking.

          Cook the Steak Bites:

            While the potatoes are roasting, heat a large skillet over medium-high heat. Add 2 tablespoons of butter and let it melt and foam. Season the steak cubes with salt and pepper.

              Sear the Steak:

                Add the steak cubes to the skillet in a single layer, making sure not to overcrowd the pan. Sear for 2–3 minutes until browned on one side, then flip and cook for an additional 2 minutes or until done to your liking (medium rare is about 130°F/54°C).

                  Add Garlic and Herbs:

                    Once the steak is cooked, lower the heat and add the remaining 2 tablespoons of butter, minced garlic, rosemary, and thyme to the skillet. Stir to combine and let the butter sauté for 1-2 minutes, allowing the garlic to become fragrant.

                      Combine and Serve:

                        When the potatoes are done roasting, remove them from the oven and toss them in the garlic butter pan with the steak bites. Mix gently to coat all the pieces in the delicious garlic butter mixture.

                          Garnish and Enjoy:

                            Transfer the garlic butter steak bites and potatoes to a serving platter. Garnish with freshly chopped parsley before serving.
