For the Chicken Marinade:

500g chicken breast, cut into bite-sized pieces

200g plain yogurt

2 tablespoons lemon juice

2 teaspoons ground coriander

2 teaspoons ground cumin

1 teaspoon garam masala

1 teaspoon turmeric

1 teaspoon cayenne pepper (adjust to taste)

1 tablespoon ginger-garlic paste

Salt to taste

For the Sauce:

3 tablespoons vegetable oil

1 large onion, finely chopped

2 teaspoons ginger-garlic paste

2 green chilies, slit lengthwise (optional)

400g canned tomatoes, crushed

1 teaspoon ground cumin

1 teaspoon garam masala

1 teaspoon sugar

200ml heavy cream

Salt to taste

Fresh cilantro, for garnish

Cooked basmati rice or naan, for serving

Instructions
 

Marinate the Chicken:

    In a large mixing bowl, combine yogurt, lemon juice, ground coriander, ground cumin, garam masala, turmeric, cayenne pepper, ginger-garlic paste, and salt. Add the chicken pieces and mix well. Cover and refrigerate for at least 1 hour, preferably overnight to enhance the flavor.

      Cook the Chicken:

        Preheat your oven to 200°C (400°F). Spread the marinated chicken on a baking tray lined with parchment paper and bake for 20-25 minutes, or until fully cooked. Alternatively, you can grill the chicken for a smoky flavor.

          Prepare the Sauce:

            While the chicken cooks, heat vegetable oil in a large pan over medium heat. Add the chopped onions and sauté until golden brown. Stir in the ginger-garlic paste and green chilies, cooking for an additional minute until aromatic.

              Add the Tomatoes and Spices:

                Pour in the crushed tomatoes, ground cumin, garam masala, sugar, and salt. Simmer for 10-15 minutes, stirring occasionally until the sauce thickens and the oil begins to separate.

                  Combine Chicken and Sauce:

                    Once the chicken is cooked, add it to the sauce. Stir well to combine and let it simmer for another 5-10 minutes, allowing the flavors to meld.

                      Finish with Cream:

                        Reduce the heat to low and slowly stir in the heavy cream. Adjust seasoning as necessary and let it heat through but do not boil.

                          Serve:
