Greek Style Loaded Hummus

Ingredients
  

1.5 cups canned chickpeas, drained and rinsed

1/4 cup tahini

2 tablespoons olive oil, plus more for drizzling

2 tablespoons fresh lemon juice

2 cloves garlic, minced

1/2 teaspoon ground cumin

Salt, to taste

Water, as needed (3-4 tablespoons)

1/2 cup Greek yogurt

1/2 cup cherry tomatoes, halved

1/3 cup cucumber, diced

1/4 cup kalamata olives, pitted and sliced

1/4 cup crumbled feta cheese

2 tablespoons fresh parsley, chopped

Optional: Pita chips or fresh pita for serving

Instructions
 

In a food processor, combine the chickpeas, tahini, olive oil, lemon juice, garlic, cumin, and a pinch of salt.

    Blend until smooth. If necessary, add water a tablespoon at a time until the desired consistency is reached.

      Taste and adjust salt if needed. Transfer the hummus to a shallow serving dish.

        In a separate bowl, mix the Greek yogurt with a little olive oil, salt, and a sprinkle of cumin for flavor. Spread the yogurt layer over the hummus.

          Top the Greek-style loaded hummus with chopped cherry tomatoes, diced cucumber, sliced kalamata olives, and crumbled feta cheese.

            Finish by garnishing with fresh parsley and a drizzle of olive oil over the top.

              Serve with pita chips or fresh pita for dipping.
