Grilled Nectarine Burrata Prosciutto Salad

This fresh and vibrant dish combines sweet grilled nectarines, creamy burrata, and savory prosciutto, all nestled on a bed of leafy greens. Drizzled with balsamic glaze and finished with fresh basil, it’s the perfect balance of flavors and textures. Ingredients
  

2 ripe nectarines, halved and pitted

8 oz fresh burrata cheese

4 oz prosciutto, thinly sliced

4 cups mixed greens (arugula, spinach, and frisée work well)

1/4 cup balsamic glaze

2 tablespoons olive oil

Salt and freshly cracked black pepper, to taste

1/4 cup chopped fresh basil for garnish

Optional: 1/4 cup toasted walnuts or pine nuts for crunch

Instructions
 

Preheat the Grill: Start by preheating your grill to medium-high heat. If using a grill pan, heat it over medium heat.

    Prepare the Nectarines: Brush the cut sides of the nectarine halves with olive oil and sprinkle lightly with salt. This will enhance their natural sweetness and prevent sticking.

      Grill Nectarines: Place the nectarines cut-side down on the grill. Grill for about 3-4 minutes until you achieve nice grill marks and the nectarines are slightly softened. Flip and grill for an additional 2 minutes. Remove them from the grill and let cool slightly.

        Assemble the Salad: In a large salad bowl, combine the mixed greens. Tear or slice the burrata and place it in the center of the greens. Arrange the prosciutto slices around the burrata.

          Add Nectarines: Once the grilled nectarines are cool enough to handle, slice them into wedges and place them over the greens, burrata, and prosciutto.

            Dress the Salad: Drizzle the balsamic glaze over the entire salad. Use the remaining olive oil to drizzle on top and season with salt and freshly cracked black pepper to taste.

              Garnish and Serve: Sprinkle with fresh basil and, if desired, toasted walnuts or pine nuts for added texture. Serve immediately and enjoy the delightful combination of flavors!
