Grilled Zucchini Greek Salad

2 medium zucchinis, sliced into 1/4 inch thick rounds

1 tablespoon olive oil

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 red onion, thinly sliced

1/2 cup feta cheese, crumbled

1/4 cup kalamata olives, pitted and halved

1 tablespoon fresh dill, chopped

1 tablespoon red wine vinegar

1 teaspoon lemon juice

1 teaspoon dried oregano

Instructions
 

Grill the Zucchini: Preheat your grill or grill pan over medium-high heat. Drizzle the zucchini slices with olive oil and season with salt and pepper. Grill the zucchini for about 2-3 minutes on each side, until they are tender and have nice grill marks. Remove from heat and let cool slightly.

    Prepare the Salad Base: In a large bowl, combine cherry tomatoes, cucumber, red onion, feta cheese, kalamata olives, and fresh dill.

      Mix the Dressing: In a small bowl, whisk together the red wine vinegar, lemon juice, dried oregano, and a pinch of salt and pepper.

        Combine Ingredients: Add the grilled zucchini to the salad mixture. Drizzle the prepared dressing over the salad and gently toss to combine everything well, ensuring the zucchini is evenly distributed.
