1 lb ground turkey

2 bell peppers (1 red, 1 yellow), diced

1 medium onion, diced

2 cloves garlic, minced

1 can (14 oz) diced tomatoes (with juices)

1 tsp cumin

1 tsp smoked paprika

1/2 tsp chili powder

Salt and pepper to taste

1 cup corn (fresh, frozen, or canned)

1/2 cup black beans (cooked, drained, and rinsed)

2 tbsp olive oil

Fresh cilantro or parsley for garnish

Optional: 1 cup cooked quinoa or rice for serving

Instructions
 

Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell peppers, and sauté for about 5-7 minutes until they are softened.

    Add Garlic: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Brown the Turkey: Push the vegetables to the side of the skillet and add the ground turkey. Cook for about 5-7 minutes, breaking it apart with a spatula, until browned and cooked through.

        Season: Sprinkle the cumin, smoked paprika, chili powder, salt, and pepper over the turkey mixture. Stir well to combine all the spices and let them cook for another 2 minutes.
